Lombra Is Now Open At WEST

We recently sat down for a Q&A with Davide La Scala, the owner of ‘Lombra’ – WEST’s exciting new dining establishment located on Charles Street.
Lombra Is Now Open At WEST

Where did the name Lombra come from?

Lombra in Italian means ‘shade’ or ‘shadow’. In northern Italy, restaurant patrons will often order a ‘ombra di vino’ which is a small 100ml glass of wine. The name seemed fitting because we were down near the lake and sea, and the shade of an umbrella is always nice.

Is Lombra a family business?

Yes, absolutely and I have some great staff on board that have been with me for years who will one day become owners too.

You have a cafe on Hutt St and another on Angas St in the CBD. What encouraged you to open a third restaurant?

I have Bocelli on Hutt Street, Est Ovest on Angas Street and now Lombra at WEST. I've been working in hospitality for 15 years and really love the industry and the concept of presenting exceptional Italian food in Adelaide. Est Ovest has been a hit with our customers and we wanted to bring that concept to the Western suburbs.

What style of food will you be serving?

Italian cuisine inspired by the Amalfi Coast & Campania region of Italy. The beverage menu will be reminiscent of the Venetian bar season.

What is Lombra’s specialty dish?

Famous Naples-style Pizza, Spaghetti Vongole (cockles) & Mozzarella in Carrozza which is a deep fried Mozzarella sandwich. It is also worth noting our coffee is a locally roasted blend made just for Lombra.

What type of service will you and your team provide?

Quality table service with a smile, with lots of Italian staff talking (shouting 😊) in their native language. You’ll feel like you’re in Italy.

We will have a strong focus on our takeaway offering of food and alcohol. We will also have a delivery service.

We also welcome functions, including private functions. Our fit out is light, bright and adaptable for any function (baptisms, birthdays, communions, engagements and other gatherings).

Tell us about your Head Chefs.

Our Head Chef is Mirko Visconte, Mirko was born and raised in Milan however his parents are from the south of Italy (Calabria & Puglia). Mirko studied and worked as a chef in Milan before moving to Melbourne for 7 years before joining us at Est Ovest and now Lombra.

We also have Fabio Di Verio (our pizza Maestro!). He was born and raised in Rome and also moved to Melbourne 7 years ago before moving to Est Ovest in 2018 – he is arguably one of the best pizzaioli in Adelaide and is a certified pizza instructor of Accademia Nazionale Pizza DOC.

What do you love most about WEST?

The WEST development is one of the most aesthetically appealing precinct developments I have seen. It’s so well planned in an iconic and thriving area. We have always wanted to bring our offering out west and this was the perfect opportunity.
